Over the years we have invested heavily in our winemaking infrastructure at Camerons Estate. Unfortunately, due to limited rainfall, for the longest time we were unable to take full advantage of our capacity. While our estate grown crops have always exceeded our expectations in quality, the same could not be said about their yield.
In 2022 we decided to branch out into something new and began experimenting with grapes grown in other vineyards and regions. We chose Heathcote as our first attempt as it is one of closest neighbours, but more importantly, it produces such a quintessential example of classic Australian shiraz. We ourselves have been long-time lovers of local Heathcote producers such as Sanguine Estate and Tellurian Wines.
We enjoyed the process so much. While our Estate Shiraz is dominated by pepper and spice, the Timmering is much stronger in vanilla and white chocolate. We found it much easier to maintain the PH of the Timmering, as the grapes were lower in potassium than our estate grown crop, and this was the first time we were able to solely rely on wild yeast for fermentation.
The 2022 Timmering was also the first time we experimented with partial whole bunch fermentation, and at 25% whole bunches, it has developed more floral notes than we have experienced in our reds previously.
All in all the 2022 Timmering is a cracker. It’s an easy drinking crowd pleaser, which upholds the quality and finesse we strive for. It’s a wine that is ready to be drunk now, and will absolutely impress as a gift, or on the table at anything from a casual barbecue to a black-tie wedding.
